What is the sublimation temperature for Iodine?
What is the boiling point of Water?

You need to find a point where the sublimation temperature for Iodine is usefully higher than the boiling point of Water.

This could possibly be achieved by changing the pressure,
Check the sublimation temperature verses pressure curves for Iodine against the Boiling temperature verses pressure curves for water.
Hopefully you will find a sweet spot where a sensibly achievable change in pressure will separate the sublimation point relative to the boiling point.
